Ham and Spinach Egg Muffins

These Ham and Spinach Egg Muffins are my latest obsession! Why has it taken me so long to get on board with this trend? The best part of this recipe is that you can use whatever leftovers you have on hand. I just froze a few slices of leftover Easter ham and pulled it out to make these. So good!

Equipment

  • Muffin Pan
  • Muffin Papers or Silicone Muffin Cups

Ingredients
  

  • 6 large Eggs
  • 1 c Cheddar Cheese shredded/grated
  • 1 c Spinach chopped
  • 1/4 c Ham small dice
  • 1/2 tsp Italian Seasoning
  • Salt and Pepper to taste

Instructions
 

  • Preheat oven to 400 degrees and line a muffin pan with liners.
  • Chop the ham and spinach and combine with all other ingredients.
  • Pour into prepared muffin liners and bake for about anywhere from 12-15 minutes or until fully cooked through.
  • Allow to cool for about 5 minutes before removing and enjoy!
